This One Pot Paleo Chicken & Veggies was the perfect rainy day meal, and incredibly simple to make. It’s chock-full of deliciousness, and you could add in additional veggies if you have them on hand. It’s a great way to use up stuff in your fridge’s veggie drawer! Throw in some celery, leeks, beets, or any other favorite winter veggies to make this meal even more unique and perfect for your tastes!

Yield: 4 Servings
Ingredients: 8 boneless, skinless chicken thighs 1 medium onion chopped 3 cloves garlic minced 1 14 oz can petite diced tomatoes 3 TBSP Save the Day Italian Seasoning + 1 TBSP, separated 2 tsp Himalayan or Sea Salt 3 medium carrots sliced 1 lb small round potatoes 2 TBSP avocado oil 2 cups organic chicken stock
Instructions:
Heat oil over medium heat in a large dutch oven.
Sprinkle chicken thighs on both sides with the 3 TBSP Italian Seasoning (see my recommended seasoning above), and brown quickly (in batches), then remove to plate (do NOT cook all the way through).
Add onion, garlic, and carrots to dutch oven and stir occasionally until onions are translucent and fragrant, then add in tomatoes and cook another 5 minutes, stirring occasionally.
