This One Pot Paleo Chicken & Veggies was the perfect rainy day meal, and incredibly simple to make. It’s chock-full of deliciousness, and you could add in additional veggies if you have them on hand. It’s a great way to use up stuff in your fridge’s veggie drawer! Ingredients:
8 boneless, skinless chicken thighs
1 medium onion chopped
3 cloves garlic minced
1 14 oz can petite diced tomatoes
3 TBSP Save the Day Italian Seasoning + 1 TBSP, separated
2 tsp Himalayan or Sea Salt
3 medium carrots sliced
1 lb small round potatoes
2 TBSP avocado oil
2 cups organic chicken stock

Ingredients:
8 boneless, skinless chicken thighs
1 medium onion chopped

3 TBSP Save the Day Italian Seasoning + 1 TBSP, separated

3 medium carrots sliced

2 TBSP avocado oil

Instructions:
- Heat oil over medium heat in a large dutch oven.
- Sprinkle chicken thighs on both sides with the 3 TBSP Italian Seasoning (see my recommended seasoning above), and brown quickly (in batches), then remove to plate (do NOT cook all the way through).
- Add onion, garlic, and carrots to dutch oven and stir occasionally until onions are translucent and fragrant, then add in tomatoes and cook another 5 minutes, stirring occasionally.
