
Ingredients
3 large boneless skinless chicken breast about 1.5 lbs
5 cloves of garlic sliced
1/4 cup olive oil
2 tsp dried oregano
1 tsp dried basil
4 oz. mozzarella sliced
1 large tomato thinly sliced
1/4 cup balsamic vinegar
Fresh Basil
Salt and Pepper
Instructions
Preheat your oven to 375 degrees Fahrenheit. Place your chicken breasts on a cutting board or sheet pan and place a piece of parchment paper on top. Use a meat mallet to pound the breasts until they are a similar thickness (about ½” thick).
Season both sides of the chicken breasts liberally with salt and pepper as well as the dried oregano and basil.
Heat the olive oil in a pan over medium heat. Once hot, add the sliced garlic. Saute the garlic until it is just fragrant, then add the chicken breasts to the pan.
Sear the chicken for about 3 minutes on each side so each side is nicely browned. Place two slices of mozzarella on each chicken breast and place the pan in the oven.
While the chicken is cooking, heat the balsamic vinegar in a small saucepan over medium-low heat. Stir occasionally and continue gently heating until the vinegar reaches your desired thickness. If you want the final result to be a bit sweeter, you can add a small amount of honey or brown sugar as it’s reducing.
Continue baking the chicken until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
Place two slices of tomato on top of each chicken breast and drizzle the balsamic reduction on top. Garnish with more dried oregano and fresh basil and serve!
