
Ingredients
1 cup self-rising cornmeal
1 cup self-rising flour
3/4 cup buttermilk
1/4 cup vegetable oil
1/3 cup + 1 Tbs water
1 Tbs sugar
2 eggs
Oil for frying
Optional:
1 cup cheddar cheese
Real Bacon bits or cooked crumbled bacon
Instructions
In a bowl mix together your cornmeal and flour until combined.
Add in your buttermilk, vegetable oil, water, sugar, and eggs and whisk until everything is incorporated.
In skillet, heat oil on medium-high.
Drop by heaping tablespoons (about 2-3 tablespoons per cake) into oil and fry until golden, flip until each side is golden about 3-4 minutes per side (depending on how hot your stove runs).
Remove from pan onto a paper towel-lined plate to drain grease.
