Healthy Lentil Salad

INGREDIENTS :
3/4 cup(s) dried lentils
2 cup(s) water
1 - bay leaf
1/4 cup(s) chopped red pepper or orange pepper
1/4 cup(s) chopped green pepper
3 tablespoon(s) balsamic vinegar
3 tablespoon(s) lemon juice
1 clove(s) chopped garlic
1/4 cup(s) chopped green onions or white onion
1/2 teaspoon(s) marjoram
1/2 teaspoon(s) thyme or ground thyme
1/4 cup(s) chopped cilantro
1/8 teaspoon(s) or more of salt and pepper to taste ( optional)

INSTRUCTIONS :
Wash lentils well and drain. Combine lentils 2 cups water and bay leaf in medium saucepan. Bring to boil. educe heat cover and cook just below simmering for 30 minutes until lentils are cooked but still firm. ook gently so lentils do not fall apart. Drain and chill lentils until cool to touch. ombine red ororange reen peppers chopped onions in small bowl. n a separate bowl Combine vinegar lemon juice garlic green onion all chopped peppers thyme marjoram fresh cilantro salt and pepper in mixing bowl large enough to be able to add lentils. Now add the chilled lentils and mix gently. over and chill for 1 hour or longer before serving.
