Key Lime Cookies
NeedTaste |These cookies are yummy Not too tart but just the right amount so you know you are eating a lime cookie. They are made green by adding a little green food coloring.. The key lime flavor in this cookie is just right. These are a tad sweet, but everyone in the Test Kitchen loved 'em. I realized a bit too late I forgot to add the green coloring to the cookies. But, they were still pretty without it.

INGREDIENTS :
2 3/4 cup(s) all purpose flour
1 teaspoon(s) baking soda
1/2 teaspoon(s) baking powder
1/8 teaspoon(s) salt
1 cup(s) butter
1 1/2 cup(s) sugar
1 - egg
3-4 tablespoon(s) lime juice or key lime juice
1 teaspoon(s) vanilla
- zest of one lime
- green food coloring
FROSTING
4 cup(s) powdered sugar
1/2 cup(s) butter
3-4 tablespoon(s) lime juice
1 teaspoon(s) baking soda
1/2 teaspoon(s) baking powder
1/8 teaspoon(s) salt
1 cup(s) butter
1 1/2 cup(s) sugar
1 - egg
3-4 tablespoon(s) lime juice or key lime juice
1 teaspoon(s) vanilla

FROSTING
4 cup(s) powdered sugar
1/2 cup(s) butter
3-4 tablespoon(s) lime juice
INSTRUCTIONS :
Cream butter sugar and egg. Add lime juice lime zest and vanilla to creamed mixture. Add a few drops of food coloring to desired green. Add dry ingredients and mix well. rop by tablespoon full and bake at 350 for 8 - 10 minutes or until lightly browned. I line my cookie sheets with the dull side of aluminum foil up for easy clean up. You can just pick up the foil and baked cookies and move them to the counter at this point. They will cool there. ou can frost a single cookie but I usually make a sandwich cookie out of them but of course you get less cookies that way.nEnjoy
