2 medium eggs
beaten lightly
1/2 teaspoon(s) vanilla
1 tablespoon(s) butter
1/2 cup(s) real maple syrup
1 cup(s) wild Maine blueberries

For lemon cream beat together 2/3 cup cream with sour cream until soft peaks form. dd lemon curd and limoncello 1 teaspoon lemon zest may be substituted. old until smooth. ring butter maple syrup and blueberries to a boil. Simmer gently. Keep warm. plit 4 croissants. ine a baking pan with parchment paper. hisk egg remaining 1/2 cup cream and vanilla in a shallow dish. ip outer sides of croissants in the egg mixture. pread bottom half of croissantu2019s cut-side with cream filling replace top half and place in baking dish. ake for about 12-15 minutes. ntil crisp golden brown on the outside and heated through. erve lemon cream croissants warm with blueberry maple syrup and additional lemon cream on the side.
