Sauteed Parmesan Zucchini & Yellow Squash
NeedTaste |Every summer no matter how few plants we plant it seems like we have too much zucchini and yellow squash. Since the neighbors don't like it when we leave it on their doorsteps, I've had to come up with ways to get my family to eat it. This is me and my husbands' favorite way.. A fabulous way to cook fresh summer squash. Onions and garlic provide so much flavor. They almost give this easy side a sweetness. Parmesan cheese on top adds a touch of savoriness to the dish. The zucchini and summer squash is nice and tender. This will for sure become a favorite with your family.

INGREDIENTS :
2 tablespoon(s) olive oil
extra virgin
2-3 clove(s) garlic
minced
1 - white onion
3 small zucchini
3 small yellow squash
1/4 cup(s) grated Parmesan cheese
- salt & pepper
to taste

INSTRUCTIONS :
Heat olive oil in 10 sautu00e9 pan. Add garlic and cook for a couple of seconds. dd onions and cook a couple of seconds. dd zucchini and yellow squash. tir and cook until onions are soft and squash is browned. ake off the heat and toss in Parmesan cheese. Sprinkle with salt and pepper. great side for grilled chicken.
