
Zucchini Chips
NeedTaste |In yet another attempt to foster a love for vegetables in my child, I came up with a quick way to make zucchini more kid-friendly. It's a bit like breaded fried zucchini but without the oil and just enough breading to add some crunch. Next time I plan to add a little grated Parmesan cheese.. These zucchini chips are slightly crisp on the outside and tender in the center. Cooking them under the broiler makes the bread crumbs nice and crispy. Easy to throw together, they're a great snack or side dish and another tasty way to use extra zucchini. So good

INGREDIENTS :
2 medium zucchinis or yellow squashes
1 - egg
1/2 cup(s) bread crumbs
dry
1 teaspoon(s) Italian seasoning
- salt & pepper
to taste

INSTRUCTIONS :
Preheat oven broiler. ash and slice zucchini into 1/4 rounds. lace onto greased baking sheet. ightly beat egg in a small bowl and use a basting brush to coat both sides of the slices with egg wash. prinkle bread crumbs over both sides of zucchini. eason with Italian seasoning salt & pepper to taste. roil for 5-7 minutes. hen turn zucchini. Broil for another 5-7 minutes. Zucchini should be tender. Serve this hot
